Sans is the french word for without. When I was diagnosed with celiac disease in 2008, I was left without my favortie treats. Celiac is an autoimmune disease that makes the body unable to tolerate gluten, a protein found in wheat, barley, rye, and spelt. That means I was without bread, cookies, pasta, cakes, and pretty much everything I loved. Instead of getting upset, I got informed. I learned which grains were ok, and how to cook with them.
